Ingredients per serving

  • 1.0 oz Peeled Garlic
  • 0.3 oz chickpeas
  • 0.2 lb fava beans
  • 0.2 oz cumin
  • 0.2 tsp Kosher Salt
  • 0.1 tbsp Lemon Juice
  • 0.1 oz Olive Oil
  • 0.1 oz paprika
  • 0.1 oz Black Pepper
  • 0.1 oz tahini

Method

1. Rinse and soak the chickpeas and fava beans in water overnight. 2. Drain the soaked legumes and place them in a large pot with enough water to cover by 2 inches. Bring to a boil over high heat, then reduce to a simmer and cook for about 1 hour or until tender. 3. While the legumes are cooking, prepare the paprika oil: In a small saucepan, heat 1/4 cup of olive oil over medium heat. Add the paprika and cook for 2-3 minutes, stirring constantly, until fragrant but not burnt. Remove from heat and set aside to cool. 4. In a food processor, combine 1 lb of the cooked chickpeas with garlic, lemon juice, cumin, salt, and black pepper. Process until smooth, adding olive oil as needed to achieve a creamy consistency. 5. Transfer the hummus to a large serving bowl or individual bowls for each guest. 6. In a separate bowl, mix the remaining 2 lbs of cooked fava beans with the remaining olive oil, lemon juice, cumin, salt, and black pepper. Gently fold in the minced garlic. 7. Spoon the seasoned fava bean mixture over the hummus, creating a layer on top. 8. Drizzle the paprika oil over the top of the fava bean layer. 9. In a small bowl, whisk together the tahini with 1/2 cup of water until smooth. Swirl the tahini mixture over the dish in decorative patterns. 10. Serve immediately or cover and refrigerate until ready to serve.
