Ingredients per serving
- 3.2 oz ricotta cheese
- 0.8 oz butter
- 0.4 each Eggs
- 0.2 cup all-purpose flour
- 0.1 oz sugar
- 0.1 oz vanilla extract
- 0.1 cup milk
- 0.05 cup powdered sugar
Method
1. In a large mixing bowl, combine ricotta cheese, 1 cup of sugar, and vanilla extract. Mix until smooth to create the filling.
2. In another bowl, whisk together eggs, milk, and flour until you have a smooth batter for the blintz wrappers.
3. Heat a non-stick skillet over medium heat and lightly grease with butter. Pour about 2 tablespoons of batter into the skillet, tilting to spread it evenly. Cook for about 1-2 minutes on each side or until golden brown. Repeat with remaining batter to make approximately 20 blintz wrappers.
4. Place a spoonful of the ricotta filling in the center of each cooked wrapper. Fold the sides over the filling and roll up tightly to form the blintzes.
5. In a large skillet, melt 4 ounces of butter over medium heat. Add the filled blintzes and cook for about 2-3 minutes on each side until they are golden brown and crispy.
6. Remove the blintzes from the skillet and place them on a serving platter. Dust with powdered sugar just before serving.
7. Serve warm as a delightful dairy breakfast treat.
