Ingredients per serving
- 0.7 oz Water
- 0.5 lb potatoes
- 0.35 oz rice
- 0.2 cup vegetable broth
- 0.2 oz Peeled Garlic
- 0.1 tsp Kosher Salt
- 0.1 tbsp pareve margarine
- 0.05 cup milk alternative
Method
1. Rinse the rice in a fine-mesh strainer under cold water until the water runs clear.
2. In a large pot, combine the rinsed rice and 7 cups of water. Add 1 tablespoon of salt.
3. Bring to a boil over high heat, then reduce to a simmer. Cover and cook for 18-20 minutes or until the rice is tender and the water is absorbed.
4. While the rice is cooking, peel and chop the potatoes into large chunks.
5. Place the potato chunks in a large pot and cover with cold water. Bring to a boil over high heat, then reduce to a simmer. Cook for 15-20 minutes or until the potatoes are tender when pierced with a fork.
6. Drain the cooked potatoes and return them to the pot. Add 2 cups of low-sodium vegetable broth, 1 cup of pareve margarine, 0.5 cup of milk alternative (oat or coconut), and 2 minced cloves of garlic.
7. Mash the potatoes with a potato masher or electric mixer until smooth and creamy. Season with salt to taste.
8. Serve the plain rice and mashed potatoes hot, either together or separately.
