🍽 serves 10
📋 9 ingredients
Ingredients per serving
- 0.6 clove Peeled Garlic
- 0.45 oz Tomatoes
- 0.2 each red bell peppers
- 0.2 each chili peppers
- 0.2 oz sugar
- 0.1 oz Onions
- 0.1 tsp Kosher Salt
- 0.05 oz Olive Oil
- 0.025 tbsp Lemon Juice
Method
1. In a large pot or deep skillet, heat the olive oil over medium heat.
2. Add the finely chopped onion and minced garlic cloves, sautéing until the onions are translucent, about 5 minutes.
3. Stir in the diced tomatoes and red bell peppers. Cook for about 10 minutes, stirring occasionally, to allow the vegetables to release their juices.
4. Add the seeded and finely chopped chili peppers, salt, sugar, and lemon juice. Stir well to combine all ingredients.
5. Reduce the heat to low, cover the pot, and let the mixture simmer gently for 45-60 minutes, stirring occasionally, until the vegetables are very soft and the flavors have melded together.
6. Remove from heat and allow the matbucha to cool slightly. Taste and adjust seasoning if necessary.
7. For a smoother texture, use an immersion blender or transfer the mixture to a regular blender and blend until desired consistency is achieved.
8. Transfer the matbucha to a serving bowl or store in an airtight container.
