Ingredients per serving
- 10.0 each grape leaves
- 0.4 oz Peeled Garlic
- 0.3 oz pomegranate molasses
- 0.25 lbs Ground beef
- 0.2 oz Onions
- 0.2 oz tomato paste
- 0.2 tsp Kosher Salt
- 0.15 cup long grain rice
- 0.1 tbsp Lemon Juice
- 0.1 oz Black Pepper
- 0.05 oz Olive Oil
Method
1. Soak the grape leaves in cold water for 30 minutes to soften them.
2. In a large skillet, heat olive oil over medium heat. Add finely chopped onions and minced garlic, sautéing until translucent (about 5-7 minutes).
3. Add ground beef to the skillet, breaking it up with a spoon, and cook until browned (about 8-10 minutes).
4. Stir in tomato paste, pomegranate molasses, salt, and black pepper. Cook for another 2-3 minutes.
5. Rinse rice under cold water until the water runs clear. Add the rice to the skillet and stir well to combine with the meat mixture. Cook for 5 minutes, stirring occasionally.
6. Remove from heat and let the filling cool slightly.
7. Drain the grape leaves and pat them dry. Place a leaf on your work surface with the shiny side down. Spoon about 1 tablespoon of the filling onto the bottom third of the leaf. Fold the sides in, then roll up tightly to form a neat package.
8. Arrange the stuffed grape leaves seam-side down in a large pot or Dutch oven. Pour lemon juice over the top and add enough water to cover the leaves by about 1 inch.
9. Place a small plate on top of the stuffed leaves to keep them from unraveling during cooking.
10. Bring to a boil, then reduce heat to low, cover, and simmer for 45-60 minutes or until the rice is tender and the grape leaves are soft.
