Ingredients per serving
- 1.6 oz spinach
- 0.8 oz Feta cheese
- 0.4 oz Olive Oil
- 0.2 oz Peeled Garlic
- 0.1 oz Onions
- 0.1 lb phyllo dough
- 0.1 tsp Kosher Salt
- 0.05 tbsp pepper
Method
1. Preheat the oven to 375°F.
2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 5 minutes.
3. Add the chopped spinach to the skillet, cooking until wilted, about 3-4 minutes. Season with salt and pepper. Remove from heat and let cool slightly.
4. In a mixing bowl, combine the cooled spinach mixture with the feta cheese, stirring well to mix.
5. Lay out the phyllo dough on a clean surface. Keep it covered with a damp cloth to prevent drying out.
6. Brush each sheet of phyllo dough lightly with olive oil. Place 2-3 tablespoons of the spinach-feta mixture at one end of the phyllo sheet, then fold into a triangle, continuing to fold until the end is reached. Repeat with remaining sheets and filling.
7. Place the borekitas on a baking sheet lined with parchment paper. Brush the tops with additional olive oil.
8. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
9. Remove from the oven and let cool slightly before serving.
