Ingredients per serving
- 0.8 tbsp Heavy cream
- 0.5 each flatbread
- 0.4 cup Olive Oil
- 0.2 tbsp lemon zest
- 0.1 oz Feta cheese
- 0.1 tbsp wildflower honey
- 0.1 oz eggplant
- 0.1 oz micro mint
- 0.1 tsp cracked pepper
- 0.1 tsp Maldon salt
Method
1. Preheat the grill to medium-high heat (450°F).
2. Slice the eggplant into thin rounds and brush both sides with extra virgin olive oil. Grill until charred, about 2-3 minutes per side.
3. In a large bowl, combine the feta cheese and heavy cream. Using an electric mixer, whip the mixture until smooth and creamy, about 2-3 minutes.
4. Gradually drizzle in 2 tablespoons of extra virgin olive oil while continuing to mix until well incorporated.
5. Place the flatbreads on a baking sheet lined with parchment paper. Warm them on the grill for about 1 minute per side or until slightly charred and warm.
6. Transfer the warmed flatbreads to a serving platter.
7. Spoon the whipped feta mixture evenly over each flatbread.
8. Drizzle the wildflower honey over the feta, ensuring an even distribution.
9. Arrange the grilled eggplant chips on top of the feta and honey.
10. Garnish with lemon zest, micro mint, cracked pepper, and a sprinkle of Maldon salt.
11. Drizzle with an additional tablespoon of extra virgin olive oil just before serving.
