Ingredients per serving

  • 0.4 oz scallions
  • 0.3 each Avocado
  • 0.3 tbsp ponzu sauce
  • 0.2 oz sesame seeds
  • 0.2 oz micro shiso leaves
  • 0.1 oz salmon
  • 0.1 oz lime juice
  • 0.1 tsp Kosher Salt
  • 0.1 oz sesame oil
  • 0.1 tbsp yuzu zest
  • 0.1 each nori sheets
  • 0.1 tsp Maldon salt

Method

1. In a blender or food processor, combine the ripe avocados, lime juice, and kosher salt. Blend until smooth to create an avocado mousse. 2. Transfer the avocado mousse to a bowl and set aside. 3. In another bowl, mix together the finely-diced sashimi-grade salmon, ponzu sauce, sesame oil, and yuzu zest. Gently fold to combine, ensuring the salmon is evenly coated with the dressing. 4. Prepare the garnish by combining the finely chopped scallions, toasted sesame seeds, shredded nori sheets, and Maldon salt in a small bowl. 5. To assemble, spoon the avocado mousse onto individual serving plates or a large platter. Place the salmon tartare mixture on top of the avocado mousse. 6. Sprinkle the garnish evenly over the salmon tartare. 7. Garnish with micro shiso leaves for added color and flavor. 8. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
