Ingredients per serving
- 1.0 oz sourdough bread
- 0.5 each egg yolk
- 0.3 cup Olive Oil
- 0.2 oz capers
- 0.2 tbsp Dijon mustard
- 0.2 oz micro chives
- 0.15 oz beef tenderloin
- 0.1 each Shallot
- 0.1 tbsp worcestershire sauce
- 0.1 oz truffle
- 0.1 tsp Maldon salt
- 0.1 tsp cracked pepper
Method
1. Prepare the beef: Finely dice the kashered and twice-rinsed beef tenderloin into 5mm cubes.
2. Cure the egg yolks: Place the egg yolks in a mixture of salt, sugar, and spices for 5 days. After curing, micro-grate the yolks.
3. Chop the shallots into a fine brunoise.
4. In a mixing bowl, combine the diced beef with capers, shallot brunoise, Dijon mustard, Worcestershire sauce, and extra virgin olive oil. Mix well to ensure all ingredients are evenly distributed.
5. Toast the sourdough bread slices until they are crisp.
6. Just before serving, shave fresh truffle over the top of the beef mixture or drizzle with truffle oil.
7. Garnish with micro chives, a sprinkle of Maldon salt, and cracked pepper.
8. Place a round white dome on each plate, fill it with the beef tartare mixture, and serve alongside the toasted sourdough crisps.
